Ingredients :

  • 1 head cauliflower, damaged into florets
  • 2 tablespoons hot water
  • 1/2 teaspoon saffron threads
  • 1/4 cup extra-virgin olive oil , divided

  • 1 yellow onion, chopped
  • 1 carrot, grated

  • Stir cauliflower "rice" and artichokes into the pan. Cook and stir until barely softened, approximately 3 mins. Pour in stock; season with salt and pepper. Bring to a boil; reduce heat and simmer till maximum of the inventory is absorbed, about 10 minutes. Stir in snow peas; simmer till all inventory is absorbed, three to 5 mins more.
  • Remove paella from the heat and drizzle last 2 tablespoons olive oil on top.

Notes :

  • Substitute vegetable inventory for the chicken stock if preferred.
  • Use mild or hot sausage as favored.
